Please note that these cookies are soft when hot and will only harden once cold.
Makes approximately 50
125 grams of flour
125 grams of sugar
1 1/2 teaspoon grated lemon zest
125 grams soft butter
1 egg yolk
1 tablespoon lemon juice
Mix flour, sugar and lemon zest in a bowl. Add the butter, egg yolk, and lemon juice.
Mix all the ingredients until the dough is smooth.
Leave in the fridge for at least 30 min
Use a teaspoon to place the dough on a baking tray.
Dip a fork in a bit of flour and press each cookie down a little bit.
Bake at 200 C at the top of the oven for 8-10 min until golden along the edge.
