125 grams of butter
240 grams of flour
85 grams of sugar
1 teaspoon of lemon zest
1 teaspoon of cardamom
3/4 teaspoon of baking powder
Cut the butter and mix with the flour.
Mix sugar, lemon zest, spices, baking powder, and add to the butter and flour mixture.
Add the egg and mix the dough.
Roll the dough into three sausages as long as a baking tray.
Bake the rolls for 20 min in the middle of the oven at 175 C
Take them out of the oven and let cool for 5 min.
Lower the temp in the oven to 140 C
Cut the rolls into pieces 1 ½ cm long.
Turn the cookies so they are laying on the side you just cut.
Bake the cakes for 25 min in the middle of the oven.
Taste wonderful, and perfect for dipping into your coffee or tea.
