Christmas Salad

So in my last post I mentioned eating a Christmas salad as one of the self care tips for Christmas. So I thought I’d post my recipe today.

This recipe can be used for both a kale or a red cabbage salad.

Ingredients:

Salad:

300 grams of finely chopped kale (no middle stalks of the leafs as they are bitter)
Or
300 grams of finely sliced and chopped red cabbage.

1 big apple, diced
1 dl of dried dates or figs (or mix of both)
½ dl of almonds, chopped
½ dl of walnuts, chopped

Dressing:

1 dl of olive oil
1 tablespoon of mustard
1 teaspoon honey
1 teaspoon white wine vinegar

How to:

Salad:

Mix all the ingredients for the salad. It taste the best if it get to stand for a few hours and then get mixed again (can easily be made the day before)

Dressing:

Mix it all in a shaker and shake until mixed.

Add dressing to taste.

Tip:

The kale salad can be fancied up a bit by adding some feta and pomegranate seeds.

The red cabbage salad taste wonderful if you dice half a peeled orange and mix into it.

 

Both salads go well with meats and the fatty Christmas food in general.
