5 ways to use chickpeas

One of my new year resolutions (you can read them all here) was to cut down in my meat consumption. Now, I’ll never be a vegan or even vegetarian. I love my milk in my coffee and a good burger once in a while, but I do want to cut down on my daily use of meat.

Luckily both me and my kids love to eat all kinds of vegetables, greens and beans, and one of our go to things are chickpeas. Chickpeas are cheap, healthy and easy to use. Low on fat, and pretty decent protein levels.

The kids absolutely love them roasted with salt, pepper and paprika. But I bet there are so many other ways to use chickpeas out there, so today I’m gonna share 5 delicious recipes with you all.

1- Roasted chickpeas.

As I mentioned my kids love roasted chickpeas, and this is my go to recipe.

1 can chickpeas
2 tbsp olive oil
1 teaspoon salt
2 teaspoon paprika
Pepper to taste

Dry the chickpeas, throw in a bowl and add everything else. Toss until the chickpeas are evenly coated. Bake in a preheated oven (200 c) for about 20 min (check them often after 15 min) until they start getting a bit crisp on the outside.

2- Hummus

I love hummus. It’s the perfect side or dip and it’s so damn easy to make. My normal hummus recipe is chickpeas, oil and what ever I have in the fridge. Everything from fresh herbs to chili can be added.

I found these 4 recipes and I’m totally gonna try them all out at some point.

3- chickpea stuffed sweet potatoes

I’m sooo looking forward to trying this recipe with the kids one day. It looks delicious, and I love everything in the recipe. And it’s gonna be interesting to try the sweet potatoes again. Only had them a few times and they have a very funny sweet taste.

4- Meatfree Curry

I’ve tried a few vegetarian curry recipes and I adore them. They are easy, delicious and often a pretty quick meal on weekdays. This here is my favorite of my own creation.

5- Falafel

I’ve tried making falafel once, a long time ago and it was sooo good. We made them after my youngest kiddo had about food from all over the world and I’ve been wanting to make them more for a long time and this seemed like a good time to start. This recipe looks amazing and I’m looking forward to trying it out.

  1. We have roasted chickpeas all the time! They are so yummy. Our recipe is slightly different, we use fennel seeds sea salt and extra virgin olive oil. I could eat them all day every day. So nice to see a bunch of recipes for chickpeas without it all being about hummus 🙂

      1. They really are. I’m a massive hummus hater, I just don’t get it. But I’ll happily have them any other way.
        Did you know you can use the chickpea water to make meringues? I haven’t been brave enough to give that a try yet.
