Squash pasta with mushroom sauce

This recipe can be made with two kinds of pasta. Normal pasta and squash pasta. I looove normal pasta, but it has a tendency to make me really bloated so I try to keep from it, so normally I make this recipe with the squash pasta.

Serves 4


2 big squash (around 800 grams)
400 grams of mushrooms
1 big onion
2 garlic cloves
3 tablespoon olive oil
Vegetable boullion
400 ml of cream

How to:

Turn the squash into pasta using a vegetable pasta tool.

(If using normal pasta, put them to boil after the instructions on the pack)

Slice the onions and mushrooms. Chop the garlic. Fry the onions until soft in 1 tablespoon of oil. Add the garlic and mushrooms and fry a few minutes.

Add the cream and vegetable boullion and let simmer at low heat until the sauce thicken.

While waiting for that you quickly fry the squash in some oil. Then toss them with oregano.

Add salt and pepper as needed to the sauce and serve hot with a side of salad.

  1. I’ve never tried doing pasta with vegetables. I see a lot of people using zucchini noodles and things like that and I think they look great! Although I don’t have a pasta tool, so I’d have to get one in order to try this. It sounds delicious!

    1. This is so delicious and easy to make. My kids love it and so far none of their friends have even commented on the missing meat. For the kids i normally do halt pasta half squash pasta, and then just full squash for me.

    1. thank you 🙂 And I couldn’t live without my vegetable pasta maker thingy. I use it for so much. Squash, carrots, and egplants are favorites. But you can also use it to make super thin potato strips that’s perfect for baking for the kids with a bit of oil and spices.
